Although pasta is not the supreme evil of the refined carbohydrate family, it still may spike your sugar levels and mess up with your hormone balance resulting in difficulties in your diet. A plate of spaghetti is also very easy to inhale, with an addition of high-calorie cheese or white sauce throwing your calorie intake plans out of the window.
This recipe swaps the not so healthy stuff such as pasta, flour, and cream for more healthy simple to break down low carbohydrate options. And it still tastes delicious!
- 2x zucchini
- 2x onions
- 3-5 garlic cloves
- 1x tin of organic tomato
- 1/2 small bag of baby spinach
- 1/2 kg of organic mince beef
- 2 tablespoons of olive oil
- mixed dry or fresh herbs (oregano, parsley, basil, paprika, chili)
- 1/2 cauliflower
- 1/2 cup of cheese (ideally Parmesan)
- 1 spoon of butter or coconut oil
Cali Bechamel How to
Cook 1/2 of cauliflower until soft. Add a dash of milk, 1 garlic, coconut oil or butter then hit puree.
Meat How To
Fry 2 roughly cut onions in olive oil until soften. Add minced meat and garlic with herbs (chili included). When the meat is done, add tin of tomatoes, salt and pepper to taste.
Zucchini Lasagne How To
Cut zucchini into approx. 5 milliliters slices longways. Slightly fry each slice from both sides. In a baking tray (I used 22 x 15 cms.) start layering zucchini slices, then spinach, meat, bechamel and cheese. (I skipped the cheese at the first layer, only used it for 2nd and the top.) The 2 zucchini lasted me for 3 layers and filled up the baking tray nicely. Bake on 160 for half an hour or until the Parmesan on the top is nicely brown. Enjoy!
